Wow. This came out incredibly. Got rave reviews from the man of the house. Original recipe found here.
Ingredients
- 1 pound of ground hot italian sausage (definitely go for the hot sausage)
- 1 small white onion, diced
- 4 cups chicken broth
- 3 cups of kale, roughly chopped and stems removed
- 1 pound of gnocchi
- 1/2 cup heavy cream
- salt and pepper, to taste
- freshly shaved Parmesan.
Instructions
- Add hot sausage and diced onion to a large stockpot. Cook over medium-high heat until the sausage is browned. Drain out any excess grease.
- Add in the chicken stock and bring the mixture to a simmer (still over medium-high heat). Once it reaches a simmer, reduce heat to medium-low and add the kale and gnocchi and stir to combine. Continue cooking for 5 minutes.
- Stir in the heavy cream. Season to taste with salt and pepper.
- Serve warm with freshly shaved Parmesan
